Fish dumplings from Jewish cuisine
The name of this traditional Jewish dish comes from the German Gefüllte Fisch, which translates to stuffed fish. They are actually dumplings or meatballs made from minced fish meat and other ingredients. Originally, the mixture was stuffed back into the fish skin, which explains the name ‘stuffed fish’.
In Jewish tradition, every festive meal is supposed to include fish. Gefilte fish is served as an appetizer and is prepared on festive occasions such as Shabbat.

What will you need?
- 500 g of minced fish meat (carp is traditional, but you can also use pike, pikeperch or other freshwater fish)
- 2 raw eggs
- grated onion
- 2-3 tablespoons breadcrumbs
- sugar, salt and pepper
- fish or vegetable stock
The simple procedure can be mastered even by novice cooks. Grind the boneless fish meat and mix with grated onion and 2 raw eggs. Season with salt, pepper and lightly with ground sugar. Fine-tune the final ‘meatball’ consistency by adding breadcrumbs. With wet hands, form smaller dumplings and cook them in the stock for approximately 10 minutes. You can then decorate them with a slice of cooked carrot.
Both hot and cold versions are great
The finished dumplings can be served hot or cold, both are very good. A good tip is to serve them with horseradish or a salad of cooked beetroot and horseradish. As a side dish, fresh bread or festive challah bread is best.
